EXCLUSIVE: Gigi De Lana shares how she recreates her favorite childhood Filipino hotcakes

Just like many of us, Gigi De Lana's fondest childhood memories include food trips with friends after school.

In an exclusive interview with the Rise artist, Gigi shared that her go-to comfort food after class was the OG hotcakes sold by street vendors.

"I love pancakes kasi. Sobrang hilig ko kahit noong bata pa ko. Alam mo 'yung after ng school mo merong nagtitinda ng pancake tapos lalagyan nila ng margarine tapos asukal tapos kakainin mo habang naglalakad ka sa daan? Gustong-gusto ko 'yun!" she giddily shared with us.

And since she barely goes out now because of the pandemic, the "The Four Sisters Before the Wedding" star said that she tried experimenting to recreate her favorite food.

"[Ang ginawa ko] all-purpose flour tapos dinagdagan ko siya ng almond flour tapos baking soda and baking powder para maging mas fluffy siya. Tapos vanilla powder," she said.

According to Gigi, she likes creating her own buttermilk for her hotcake mixture instead of just using water.

"Tapos instead gamitin ko water, ang ginamit ko soy milk unsweetened tapos lalagyan ko siya ng apple cider (vinegar) para maging buttermilk. Para mag-mix 'yung lasa niya. Tapos ibubuhos ko doon, lalagyan ko ng sugar na konti and pinch of salt para magkaroon siya ng lasa," she continued.

"Tapos ang pampatamis na niya kasi yung maple syrup saka 'yung butter sa huli," she added.

And voila! Her favorite hotcakes, achieved with an even better taste!

Apart from her winning hotcakes, Gigi also has another special recipe — tofu sisig but with a twist.

"Lagi nilang nire-request sa'kin 'yung tofu sisig na merong shiitake mushroom," she shared. "Tapos yung shiitake mushroom gagawin ko siyang parang tidbits lang, tapos 'pag finry ko siya, crispy. So para siyang balat ng baboy. 'Yun 'yung consistency niya pero hindi siya lasang ganon. Lasa siyang pusit," she added.

Gigi then proceeded to share her step-by-step recipe.

"'Yung tofu naman, para 'yung consistency niya parang baboy din na may taba, nilalagyan ko siya ng glutinous rice flour. Ico-coat ko lang tapos 'pag cinoat ko na doon sa cubes na tofu, fina-fry ko siya. After i-fry, makikita mo medyo crispy na siya, alisin mo na then after that, doon ko na ilalagay 'yung mga onions, onion, chives, and shiitake mushrooms."

"Tapos ilalagay ko 'yung tofu, i-stir ko lang sila, tapos next is 'yung sili na green tapos isang siling labuyo tapos doon ko lalagyan ng toyo at calamansi. After nun, lalagyan ko siya ng vegan mayonnaise," she added.
